Weekly Meal Plan 12/1

Welcome to my weekly meal plan! Every week I try to put together a meal plan with some new recipes, some easy recipes, and a yummy mix of food. In the last part of my pregnancy and until recently postpartum, we relied heavily on convenience foods but that was starting to make me feel a little icky and bored. 

I also want my daughter to see us eating a lot of different foods, be exposed to cooking, and eventually hopefully eat a variety of foods herself. She is approaching 4 months old so I’m scheming about introducing solids to her in the next few months. 

This week is a bit more involved but our weekly produce box has a bigger variety this week. It is also my first week back working full time so I tried to choose meals that have shorter prep times to keep things easy. 

This week’s box includes:

  • Baby bok choy
  • Cilantro
  • Gala apples
  • Green lettuce
  • Oranges
  • White turnips
  • Rainbow chard
  • Red beets
  • Red radishes
  • Yellow potatoes
  • Yellow onions

It’s also worth noting that I am vegetarian and my husband doesn’t eat much meat. 

Breakfast:

  • An assortment of oatmeal, toast, smoothies, cheese, and fruit. On the weekends one or both of us will do eggs and potatoes. 

Lunches: 

  • Yellow tofu curry over rice (all week to keep it simple)

Dinners:

  • Potato Tacos
    • Tacos filled with beans, cheese, and potatoes coated in oil and taco seasoning and roasted 
    • Topped with cilantro and radishes
  • Boxed mac and cheese with apple salad (lettuce, jack cheese, vinaigrette, and chopped apples)
  • Polenta with jack cheese, veggie hot dogs, and sauteed rainbow chard
  • Perogis with veggie hot dogs and roasted cabbage
  • Pasta and red sauce with roasted turnip, brussel sprouts, and beets

Misc Meals:

  • Grilled cheese with canned tomato soup
  • Ramen with tofu and bok choy
  • Pasta with broccoli
  • An assortment of mediocre frozen meals

I haven’t eaten most of these meals in a long time and I’m happy to eat them! I should note that cooking lunch for the week will probably take about an hour and then each dinner varies between 30-90 minutes but some of that is cooking time where I can be with my family. For example, we’re eating a lot of roasted veggies this week and those have longer oven times. I won’t be actively cooking for 90 minutes.
